M. Aubert de Villaine's thoughts on other
vintages and the domaine in general:

A. dV:  1999 was the most successful vintage of
my career.  It was exceptional.  Hot, but not too
hot, the grapes matured beautifully and the
harvest was perfectly controlled.  The wines are
richer and more profound than the 1990’s.

DC: We have the chance to pour a 1997 Romanée-
Conti for the event at a semi-reasonable price.  Is
it something we should consider?

A. dV:  That would be a shame.  It’s too young.  
The 1997 will be a great wine but it is marked
today by green notes on the nose.  These will
evolve into aromas of rose petals, soft and elegant
with time.  Today it is not ready.  Plus, if you
serve a Romanée-Conti you have to separate it
from the tasting.  It must be alone.  It would be a
shame to open that wine today.

A. dV:  1992 is a vintage that...was difficult for the
vines all year until September, which was warm
and clear.   We worked hard to sort and select
only the best grapes.

The wines are delicate and soft.  They are not
complex and multilayered.  1992 produced grapes
that had pretty acidity that has helped them
mature into interesting wines today.  They are
mature and drinking well right now.  They
should be enjoyed with lighter white meats.  
They are wines for the table.  Grands Echézeaux
and, Romanée St. Vivant are perhaps my favorite
from the vintage.

DC: I have read that you do not use grapes from
vines that are under 10 years old.

A. dV:  It is closer to fifteen years, on average.  
There is not a formula, but the vines are just not
ready before that age.  In Echézeaux all the vines
are a minimum of 15 years and we like to say the
average age of the vines you drink is 40 years
old.  Some of the other vineyards are closer to 50
and 55 years old on average.

Young vines produce grapes that will perhaps
have more fruit up front, but less depth and
complexity.  Age brings with it a certain elegance
and depth.
