Once the Chardonnay is in barrel, it will be stacked in the corner, in this case behind the
fermenting tanks, and left to quietly develop.  Fred likes the wine to sit on its lees, the
combination of dead yeast cells and solids from the grapes which, when properly managed,
provide the wine with added structure and depth.
