| Wait a minute... Remember the golden grapes? Remember the pale straw and golden hue of your last glass of Chard? I know Fred's wines as crystal clear, visually appealing examples of Chardonnay. The color and opacity of the pressed juice was one of the most surprising things I saw at the winery. Over the next fourteen to eighteen months, yeasts will eat the sugars and many larger solids will settle to the bottom of the barrels in which the wine starts its life. Never fear, the wine will be perfectly clear when bottled. |
