Fred watches as the juice starts to fill the barrels.  He also starts his watch.  Like just about
everything else at that goes on at the winery, Fred knows how long it will take his pump to
fill each of the barrels.  He sets his watch and can continue with other tasks without worrying
about overflow.  Once again, I was reminded of terrifically organized chefs who manage a
hundred details at once yet seem to be aware of everything that happens in the kitchen.

It is a skill I admire, I envy, and I lack.

From here, all that is left is to stack the barrels in a quite corner and let the juice slowly
ferment into wine...
