| The wines of Domaine Martin Schaetzel have layers and complexity. From the introductory Cuvée Reserves to his stunning single vineyard and Grand Cru bottlings, they all offer value and surprising nuance. Expect rich, round and floral notes from his Pinot Blanc and Pinot Gris. They are ideal with foods that have a bit of heat; simple Indian, Thai Vietnamese and Mexican all work well. A thai style cabbage salad with both heat and crunch is a terrific counterpoint to both. Jean's Gewurztraminers prove that local pairings can be best. With a properly aged Munster, his Cuvee Reserve is perfect. The salt on the exterior of the cheese softens the wine and makes the fruit jump forward. For a more exotic pairing, his single vineyard Cuvee Catherine from Kaefferkopf is particularly good with Rick Bayless' food at Topolobampo - rich, complex, and spicy. Pairing Riesling with food is like shooting fish in a barrel, its hard to miss. All of Jean's Rieslings are marked by a certain degree of structure and balance between minerality and fruit. They will pair with complex Mexican moles based on chocolate and spice as well as they do with fresh fish and olive oil. A pairing of hamachi tuna with fennel blossom infused olive oil and Jean's Grand Cru Schlossberg at Spiaggia was astounding. These are wines that encourage and reward creativity and diversity.
